As the global culinary sector enters a new era of scientific and educational development, the Master Chefs International Journal proudly launches its first official online edition under a recognized international academic structure.

This journal represents a milestone in the evolution of professional culinary education and arbitration, combining scientific rigor with real-world expertise from chefs, judges, educators, and researchers across multiple continents. It serves as the exclusive academic platform for publishing research and standards developed by the International Union of Arab Master Chefs (IUOAMC – UK), the International Culinary & Gastronomy Arbitration (ICGA – UK), and the World Supreme Authority for Culinary Arbitration.

Our mission is to advance culinary knowledge, promote sustainable and responsible food practices, and support global standardization in judging and arbitration. Through this online edition, we aim to provide open-access content that bridges the gap between the kitchen, the classroom, and the research lab.

Aims

• To publish high-quality scientific and professional research in culinary arts, gastronomy, and sensory evaluation.
• To support the development of global culinary arbitration standards and transparent judging methodologies.
• To promote innovative educational methodologies, including experiential, project-based, and sensory-based learning in culinary education.
• To encourage sustainable culinary development by addressing food waste reduction, responsible sourcing, and environmentally conscious kitchen practices.
• To provide an international academic platform connecting chefs, judges, educators, and researchers worldwide.

Scope

The journal welcomes original research articles, review papers, case studies, technical reports, and short communications in (but not limited to) the following areas:

• Culinary Science, food innovation, and modern cooking technologies.
• Gastronomy and sensory studies, including flavor profiling and sensory analysis.
• International culinary arbitration and judging standards for competitions and evaluations.
• Curriculum development and educational methodologies in culinary and hospitality training.
